Pumpkin seeds are a good source of protein. They contain 23 to 25 grams of protein / 100 g. They contain plenty of eg. potassium, zinc, selenium manganese, magnesium, iron, phosphorus, copper and zinc, and vitamins B, such as thiamine, vitamin B6 and folate, and vitamin K.
Seeds are rich on good fats: the most polyunsaturated linoleic acid and the second most unsaturated oleic acid. Pumpkin seeds have plenty of Omega-3 fatty acids, which are beneficial to joint health and alleviate inflammation. In addition to fat, the seeds contain alpha-tocopherol, natural vitamin E: 34.5 mg / 100g! Pumpkin seeds are excellent source of various vitamins E, as they contain not only alpha-tocopherol, but also gamma-tokoferol and delta-tocopherol. Animal testing suggests that these latter vitamin E forms may prevent cancer.
Eating pumpkin seeds may be beneficial to blood vessels because they have a lot of arginine, an amino acid that acts in the body as a precursor of nitric oxide. Nitric oxide expands and relaxes blood vessels, which can further lower blood pressure.
Pumpkin seeds also contains eye-protective lutein, zeaxanthin and carotenoids. In addition, the high zinc content of the seed promotes good resistance.
