Yeast cell fibre structures – beta-glucans and MOS
The cell wall of brewer's yeast naturally contains beta-glucan structures and mannan-oligosaccharides (MOS), which are fibre compounds typical of yeast.
Beta-glucans are soluble fibre structures involved in nutrient processing in the digestive tract and in the natural functions of the gut. They form part of the yeast cell wall structure and serve as a nutritional source of fibre.
Mannan-oligosaccharides (MOS) are fibre structures found on the surface of the yeast cell, used in feeding as part of a diet that takes the gut microbial environment into account. MOS compounds are involved in microbial interactions in the gut and in nutrient utilisation.
Nutritional significance of brewer's yeast
